Local Ibicencan chef Silvia Grimaldo has worked for us at Deliciously Sorted for over 8 years and never ceases to amaze our clients with her simple and gorgeous tasting food. We decided to catch up with her and find out what her secret is…
How long have you been cooking professionally?
I come from a very foodie family. My mother used to own her own restaurant and food has always been a huge part of my life. I have worked professionally for over 10 years and 8 years with DS.
Where did you train to cook?
I trained every day with my mother here in Ibiza growing up. Cooking is in my blood. When I decided that I wanted to do it professionally I went to London and Bombay to work and train in restaurants. I love to travel and learn new recipes from all around the world, so I keep learning all the time.
How would you describe your way of cooking?
My way of cooking is pretty contemporary. It’s simple, clean and full of flavour. I cook gorgeous heartwarming family meals that are inspired from all around the world. As I said before, I have travelled a lot and picked up so many different types of cooking along the way. My meals are very global.
What’s so great working for us at Deliciously Sorted?
For me the organization is amazing. You’re easy and very professional to work with which means I can focus on delivering excellent meals to the clients.
What’s your goal when cooking for a client?
I want them to feel my energy and taste my flavors in the food. For me it’s important that my clients understand what they are eating, so I always explain what I have cooked and how I have cooked it.
What’s your perfect idea of a great dinner?
My father is a great cook (although he doesn’t cook very often) and for me, the perfect dinner is when my father cooks for my whole family and friends. He does the best paella in the whole wide world!
What’s your favorite type of food, both to eat and to cook?
I absolutely love Italian food (sorry Spain), it’s simple and just gorgeous. However, for me the most amazing chefs you find in Japan. They cook in a way no one else can. It’s clean and super simple, they are the alchemists of the cooking world.
Here on the island, what’s the best place to find excellent organic products?
There are so many great local places here on the island if you drive in to the countryside. One of my favorite ones is Valentina’s Shop in Ibiza food market; she has the best local fish you can find. I come from a farming family and we make our own olive oil, produce fruit and Ibicencan wine and we have more than hundred fruit trees.
Do you have a favourite restaurant on the island?
Can I name more than 1? Ibiza has so many great restaurants and my tip is if you see a restaurant that is full of Ibicencans, it will be a good one. One of the best seafood restaurants I know is Restaurant Port Balansat in Port San Miguel. Miguel Balansat owns it and he does great olive oil as well. One of my other favourite places is Macao Cafe in Santa Getrudis. It’s a fantastic Italian restaurant and the owner is great!
To finalise this interview, what is your secret to great cooking?
Well, I love to cook food and I always use fresh and local products but my main secret is that I always use something raw in each meal. This really freshens up the flavours in the dish and makes all the difference!
